One sunny afternoon, with the air filled with the scent of fresh basil wafting in from the garden, I decided to try my hand at making a Roasted Cherry Tomato and Feta Galette. It was that perfect time of the year when tomatoes are bursting with flavor, and I wanted something rustic yet delightful to share with friends. I can still hear their excitement as I pulled it from the oven, golden-brown and oh so inviting.

This dish became a centerpiece for a small gathering on my patio. As we savored each slice, laughter mingled with the aroma of baked tomatoes and feta, creating an atmosphere that felt simultaneously vibrant and intimate.

Ingredients

  • All-purpose flour: This creates the base for the flaky pastry, so quality matters. Use freshly bought flour for the best results.
  • Cold unsalted butter: The butter needs to be cold; it’s key to achieving that delightful flaky texture.
  • Cherry tomatoes: Choose the ripest, sweetest ones for maximum flavor. You can roast them and watch them burst beautifully.
  • Feta cheese: Adds a creamy saltiness that balances the sweetness of the tomatoes perfectly.
  • Fresh basil: Its fragrant aroma elevates the dish, making each bite feel like a hug from nature.

Make the pastry:
In a large bowl, combine the flour and salt. Add the cold butter, working it in until the mixture resembles coarse crumbs, then add ice water until it just comes together.
Chill the dough:
Shape the pastry dough into a disk, wrap it in plastic, and let it chill for about 20 minutes to relax.
Prepare the filling:
Preheat your oven to 400°F (200°C) and toss the halved cherry tomatoes with olive oil, sea salt, black pepper, dried oregano, and minced garlic.
Roll out the pastry:
On a floured surface, roll the chilled pastry into a rough 12-inch circle and transfer it to a lined baking sheet.
Assemble the galette:
Sprinkle half the feta over the center, add the tomato mixture, and top with the rest of the feta and chopped basil.
Fold and bake:
Fold the edges of the pastry over the filling, brush it with beaten egg, and bake for 35-40 minutes until golden brown.
Garnish and serve:
Let cool for a few minutes, garnish with fresh basil and black pepper, then slice and enjoy warm or at room temperature.

The first galette I baked was a charming mess, with a crust that didn’t want to hold together. But as we dove in, it turned out that the flavors were so vibrant that no one cared about the aesthetics; it became an instant classic in our circle.

What You Need

Pastry

01 1 1/4 cups (160 g) all-purpose flour
02 1/2 tsp fine sea salt
03 1/2 cup (115 g) cold unsalted butter, cubed
04 1/4 cup (60 ml) ice water, plus more if needed

Filling

01 2 cups (300 g) cherry tomatoes, halved
02 3 tbsp olive oil
03 1/2 tsp sea salt
04 1/4 tsp freshly ground black pepper
05 1 tsp dried oregano or thyme
06 5 oz (140 g) feta cheese, crumbled
07 1 clove garlic, minced
08 1 tbsp fresh basil, chopped (plus extra for garnish)

Finish

01 1 egg, beaten (for egg wash)
02 Freshly ground black pepper, to taste

How to Make It

Step 01

Prepare pastry dough: In a large bowl, combine flour and salt for the pastry. Add cold butter and work it in with your fingertips or a pastry cutter until mixture resembles coarse crumbs. Add ice water gradually, mixing until dough just comes together. Shape into a disk, wrap in plastic, and chill for 20 minutes.

Step 02

Preheat oven and prepare baking sheet: While dough chills, preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 03

Prepare tomato filling: In a bowl, toss cherry tomatoes with olive oil, salt, pepper, oregano (or thyme), and minced garlic.

Step 04

Roll out pastry: On a floured surface, roll out the chilled pastry to a rough 12-inch (30 cm) circle. Transfer to the prepared baking sheet.

Step 05

Assemble galette: Sprinkle half the feta over the center of the dough, leaving a 2-inch (5 cm) border. Top with cherry tomato mixture and sprinkle with remaining feta and chopped basil.

Step 06

Fold edges and apply egg wash: Fold the pastry edges up and over the filling, pleating as you go to form a rustic edge (the center will be exposed). Brush pastry with beaten egg.

Step 07

Bake galette: Bake for 35–40 minutes until golden brown and tomatoes are roasted. Let cool for a few minutes.

Step 08

Garnish and serve: Garnish with more fresh basil and freshly ground black pepper. Slice and serve warm or at room temperature.
