01 - 4 Italian sausages (mild or hot, approximately 14 oz total)

02 - 2 large bell peppers, sliced into strips
03 - 1 large red onion, sliced into wedges

04 - 2 tbsp olive oil
05 - 1 tsp dried oregano
06 - 1 tsp dried basil
07 - ½ tsp garlic powder
08 - ½ tsp crushed red pepper flakes (optional)
09 - ½ tsp kosher salt
10 - ¼ tsp black pepper

# How to Make It:
01 - Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
02 - In a large mixing bowl, combine bell peppers and red onion with olive oil, oregano, basil, garlic powder, crushed red pepper flakes (if using), kosher salt, and black pepper. Toss until evenly coated.
03 - Spread the seasoned vegetables evenly on the prepared baking sheet. Nestle the Italian sausages among the vegetables.
04 - Place the baking sheet in the preheated oven. Roast for 25 to 30 minutes, flipping sausages and stirring vegetables halfway through. Cook until sausages reach an internal temperature of 160°F (71°C) and vegetables are tender and caramelized.
05 - Remove from oven and let rest for 2 to 3 minutes. Slice sausages if desired, garnish with fresh parsley or basil, and serve warm either alone or with crusty bread or rice.
